Description

OMO Petty is a very delicate and elegant paring knife with a blade length of 12 cm. The softly polished Damascus blade is strong and thin, providing a very exclusive feel during use.

The special blade shape with a slanted front is a hybrid where the classic Petty meets the distinct shape of a Bunka.

The Petty/Paring knife is a perfect model for smaller tasks and smaller ingredients where precision is paramount. Use it for peeling onions, potatoes, cutting fruit and vegetables, or detailed work with fish, for example.

Blade The knives in the Satake OMO series feature an incredibly beautiful Damascus blade with 67 layers of AUS-10 steel. This steel is manufactured by Aichi Steel Corporation, Japan, and is optimal for high-quality kitchen knives due to its balanced properties.

AUS-10 has a Rockwell hardness (HRC) of around 58-60, making it hard enough to hold a sharp edge but soft enough to be relatively easy to sharpen. The steel has excellent edge stability, meaning the knives maintain their sharpness for a long time. Thanks to the high chromium content and the addition of molybdenum, AUS-10 is highly resistant to rust and stains.

To maximize the life and performance of the knives, they should be hand-washed and dried thoroughly after each use. Storage on a magnetic strip is recommended.

Flat Grind The edge of the OMO blades features a flat grind, meaning the edge has no secondary bevel but is ground straight from the upper part of the edge to the tip. This maximizes the knife's sharpness and provides a wonderful sensation of precision during use.

Handle The handle is made of Black Sanders (also known as Dalbergia melanoxylon, African Blackwood, or Mpingo). This wood species is highly valued for its exceptional properties. The heartwood is deep black to dark purple-brown, sometimes with beautiful contrasting streaks. It is one of the hardest woods, making it extremely durable and resistant. Due to its durability and aesthetic quality, it is an excellent choice for exclusive knife handles.

Satake developed this beautiful handle according to the philosophy "Japanese tradition for the Nordic kitchen". The top of the handle is octagonal, a classic Japanese design, while the underside is more rounded, providing a very comfortable and soft grip.

Bolster Heating stable burl wood is used for the bolster. Burl (Masur/Vril) is a tree growth where the wood has grown in an unusual and irregular way, creating a decorative and unique pattern. Being "heat-stable" means the wood has undergone a treatment making it more resistant to changes in shape and structure when exposed to temperature fluctuations, ensuring it won't crack or warp.

Packaging The knife boxes for Satake OMO are something extraordinary. Designed with the feeling of finding a forgotten treasure, the boxes are made of robust, weathered steel with rust and scratches, contrasting beautifully with the exclusive knife resting on steel-blue satin inside.
